Thailand – How I First Came Here

I first arrived in Thailand in 2004 and I came here more of less by accident. I had travelled a lot in Europe: Russia, Western Europe, Scandinavia, North Africa and north South America, but I had never got around to travelling to Asia.

One night, I was talking to a friend who had travelled extensively throughout the world and he was telling me about his favourite country, to where he had been returning year after year for fourteen years. Knowing the man’s experience as a traveller, I was very surprised to hear that he had been choosing to go to the same location in Asia for fourteen years.

I had to ask him which part of huge Asia held such an enticement for him and he said Thailand. I knew practically nothing about Thailand, except that I had had a few meals at a near-by Thai restaurant over the years. I also knew from collecting stamps as a kid that it used to be called Siam. Anyway, my friend asked me if I’d like to go. I said that I would ‘one day’ and meant it.

He startled me by saying that he was going to Thailand for a month soon and that I was welcome to go with him, if I wanted. I replied that I had a couple of jazz festivals to go to soon and maybe I would, if there was at least a month between them and if I could get a flight and if… I could hear myself putting him off, but I did not understand why I was delaying.

A number of hours later, I went home and being a keen Internet user, I checked out a bit about Thailand on the travel brochure sites. It looked really fantastic. The prices were good too except for the flights. Hotels were cheap to reasonable and food and drinks prices were low compared to where I lived. So, I checked the dates of the two Jazz festivals and they were thirty-three days apart. Now for the flight. I spent well into the next morning checking flights and discovered one for the day after the first festival leaving from our local airport. It was not the cheapest flight, but it gave me more time.

In a reckless moment, I booked it there and then online. I then found an inn with rooms to let online that my friend had said he went to on quiz evenings and guessed that they would be open by now serving breakfasts. I sent them an email and a reply came back twenty minutes later. I had been lucky again. The boss was in the middle of checking yesterday’s figures, when he saw my email come through. However, not sure of his Internet ability, he wanted me to phone him right away. I checked my watch, it was still 4AM so I phoned.

He took my booking on trust and so I did not have to make a deposit. I had heard about Thailand, made up my mind to go and booked the flight and room all within five hours and I could not wait for nine o’clock to come to notify my friend that I would be going too.

These are some of my favorite sights and sounds in Arlington. 1. Dallas Cowboys stadium is extremely impressive, it seats 80,000 comfortably and can be increased to 110,000 people. The stadium is fully enclosed with a retractile roof and can be used for many different venues. You can get a tour of the stadium which takes about an hour and well worth it!

2. There is Six Flags over Texas which is fun for the entire family! If you haven’t ever been before to a Six Flags then this is the time to go and try one out! With tons of exhilarating rides for adults and kids your sure to have a great day!

3. The Country Peddler Show comes to Arlington Convention Center in March, August and November every year. People from all around converge to sell just about anything you can imagine. Among the menagerie of goodies to be found are stained glass, stepping stones, homemade jelly, specialty clothing, candles, handmade quilts … and too much more to list!

You already have those items in your cupboard with the possible exception of the yeast, which can be bought everywhere at low cost.

And I’m sure you already know what happens when you cook following a recipe, don’t you? You have already read the recipe through and you know you have everything in the cupboard, but when the recipe requires, let’s say, lemon peel, you open the cupboard door and see that you don’t have any lemons – but you do have orangess! Oh, well you think, oranges’ll do. You make do. You try things out. And that means that you are developing your talent and creativity. Bread making mixes will not do that for you.

A good bread making machine cookbook will have well over 100 recipes coming from a number of different countries and you will become really enthusiastic about experimenting with the various ones. Have you ever eaten Welsh bread – Bara Brith? Or Amish bread? Cajun bread or onion bread? Cranberry bread is lovely too, but one of my all time favourites is Brazil Nut Bread – absolutely delicious.

The fact is that you may not find recipes for all these breads in one recipe book, but if you have a safe starting point, like a bread recipe cookbook, you can begin by using previously tried and tested gourmet bread recipes and gradually develop your own – oftentimes because you have to.

I once made a fantastic loaf by adding all the left-over vegetables from my Sunday lunch. It was lovely, but I could never quite reproduce it, because I did not write down the weights and measures. I could only remember that it had green beans, potatoes and sweet corn in it!

Bread machine mixes will never in a million years give you that, will they? And bread machine mixes are relatively expensive compared to the cost of five kilos of flour. I always vary the ingredients too: honey instead of sugar, milk instead of water, olive oil or butter instead of say, corn oil. Rock salt instead of sea salt or visa versa. You get the picture.

Bread machine mixes are limited and limiting. A bread making machine is a great way to use up leftovers. I have even put meat and fruit in my gourmet bread. My principle is: if it’ll go in a sandwich it’ll go in the dough – like an Indian stuffed paratha or stuffed naan bread.
